Jean Elizabeth Dingman Skinner passed away early morning, August 31, 2024, in Duluth, MN. Born in Minneapolis January 26, 1933, to Paul and Myrtle (Solberg) Dingman, she graduated as valedictorian from Washburn High School in 1951, earned her B.S. from the University of Minnesota and her masters’ and doctorate degrees from Oregon State University. She taught nutrition at the University of Tennessee for 30 years, retiring as a full professor at age 70. She was President of the Society for Nutrition Education, published more than 50 articles, and was awarded the Huddleson Award for an article on children’s food preferences. She is survived by 3 children, Charles Skinner (Mie), Ann Rider (Tom), Mary Junnila (William); 6 grandchildren, Christopher Rider, Charlotte Skinner Rickert, Molly Larson, Caroline Skinner, Eric Junnila, Andy Junnila; and great grandson Aiden Amaut Rider. She loved hosting big family dinners in her Lutsen home, traveling to Norway, Australia and Egypt, living near the Oregon coast, and retiring close to her beloved grandchildren and Lake Superior. A devoted mother and grandmother, she will be greatly missed.
A memorial service will be at Peace Church in Duluth, September 14, 2pm. Donations asked in lieu of flowers to Lighthouse Center for Vital Living in Duluth or Care Partners in Grand Marais.
